South Beach Diet Belgium Waffles

The hardest part about the South Beach Diet because breakfast. For real y'all. Even now, thinking about eating another egg white makes me want to gag. I like egg whites, but oh my, the texture has become almost too much for me to handle!

Most days for breakfast we made an "egg white pile on:" take 1/2 C eggs and microwave, top with cheese, turkey bacon and bell pepper {side note: I used the frozen kind and just microwaved them every morning} and you're good to go. A girl can only eat that for some may days (about 9 straight) before she needs something different.

This is a recipe I found on my new favorite website and I really think I could have cried the first time I made it. Because you have absolutely no idea just how good a waffle with texture can taste after too many days of slimy egg whites!

Belgian Waffles

2 large eggs
1/4 C Lowfat Ricotta Cheese (store brand)
1 T Granular Splenda, more or less to taste
1/2 t. Baking Powder
1/4 t. Cinnamon, more or less to taste
(optional)
Dash Nutmeg, more or less to taste (optional)

Directions:

Preheat waffle iron. Beat eggs with electric mixer on high for 1
minute to make them light and fluffy. Add all other ingredients. Beat until smooth. Spray waffle maker with PAM or other cooking spray. Pour batter, close and cook as usual for waffles.


WARNING: this recipe is VERY RUNNY! The original recipe that I found said to pour the whole mix into the waffle maker, which resulted in a countertop covered with batter.  Just know to err on the side of a too small waffle rather than a big one, as it will spread a lot as it is cooking.

I also have to throw this story in just to embarrass him {even though it won't!} I was running a little late the other morning so Cody offered to make the waffles for me. I quickly wrote down the recipe and he set off on his way to make them. I came into the kitchen after he said they were ready and took a big bite... only to spit it into the trash. Cody learned a rookie mistake when it comes to cooking: there's a BIG difference between baking powder and soda! At least Kota got a good breakfast that day!
